My community garden plot has yet to bear any edibles, but my little balcony garden is beginning to reward me.
I have a healthy little crop of sugar snap peas and leaf lettace. Combine the greens and peas with a bit of goat cheese and dress with balsamic and olive oil, and voila-
Lunch is served! But maybe one more dish,
Vegan potato salad starring herbs from the balcony. The salad's ingredients are yukon gold potatoes, onions, soy bacon bits, dill, parsley, apple cider vinegar, and olive oil. Yum!
